• 1 Persian cucumber
  • Vine tomato
  • 1/4 Red onion, thinly sliced
  • ½ Green bell pepper
  • 8 Kalamata olives (pitted)
  • 3 oz Feta cheese (sheep, cubed or crumbled)
  • 6 Mint leaves
  • 1 tsp Red wine vinegar
  • 1 tsp Olive oil
  • 1 tsp Lemon juice
  • 2 tsp Roots Fresh Greens blend 


  1. Chop cucumber, tomato, and pepper into 1-inch pieces.
  2. In a small bowl, combine Roots Fresh Greens blend, red wine vinegar, olive oil, and lemon juice; mix well.
  3. In a large bowl, toss the chopped vegetables, pour the sauce on top, and mix.
  4. Transfer mixture to a serving platter.
  5. Scatter the thinly sliced red onion on top.
  6. Garnish with olives and mint leaves.
  7. Crumble feta cheese generously over salad.
  8. Serve immediately.
