Ingredients:
- 1 Persian cucumber
- 1 Vine tomato
- 1/4 Red onion, thinly sliced
- ½ Green bell pepper
- 8 Kalamata olives (pitted)
- 3 oz Feta cheese (sheep, cubed or crumbled)
- 6 Mint leaves
- 1 tsp Red wine vinegar
- 1 tsp Olive oil
- 1 tsp Lemon juice
- 2 tsp Roots Fresh Greens blend
Preparation:
- Chop cucumber, tomato, and pepper into 1-inch pieces.
- In a small bowl, combine Roots Fresh Greens blend, red wine vinegar, olive oil, and lemon juice; mix well.
- In a large bowl, toss the chopped vegetables, pour the sauce on top, and mix.
- Transfer mixture to a serving platter.
- Scatter the thinly sliced red onion on top.
- Garnish with olives and mint leaves.
- Crumble feta cheese generously over salad.
- Serve immediately.
