Ingredients for fish:
- 6 Branzino fillets with skin on (approx. 7 oz each)
- 1 Garlic clove
- 3 tbsp Olive oil
- 4 tsp Roots Ocean blend
- Salt to taste
Ingredients for vegetables:
- 1lb Broccolini (stems removed)
- 1lb Green beans
- 2 Green zucchinis
- 4 Shallots, peeled
- 10 Garlic cloves
- 1 Hot green pepper
- Olive oil
- Water
- Salt
- Black pepper
Preparation:
Vegetables
- Fill a pot ¾ full with water and bring to a boil. Prepare a large bowl with ice water.
- Once boiling, add the broccolini to the pot and cook on high for 5 minutes. Strain and let cool in ice water. Repeat this step with the green beans.
- Chop zucchini, garlic, and hot green pepper to thin slices and quarter the shallot.
- Heat oil in a frying pan to medium, add shallots and stir while cooking until soft; add garlic and hot pepper, stir while cooking one more minute.
- Add broccolini and green beans to the pan with the vegetables and add 2 oz of water to create a sauce.
- Continue cooking all ingredients for 3-5 minutes and then remove from heat.
Fish
- In a bowl, gently mix pieces of branzino with Roots Ocean blend and 4 tablespoons of olive oil; let rest for 5 minutes.
- Heat a non-stick frying pan to medium heat with olive oil and garlic.
- Once hot, place branzino fillets in the pan, skin side down, for 3 minutes.
- Flip pieces over and cook for an additional 30 seconds; remove from heat and place on a flat serving dish alongside the vegetables.
Presentation:
Drizzle a bit of olive oil and balsamic vinegar around branzino and vegetables, and serve.
